From the gustatory point of view it is the note of tomato and fresh herb that are the masters. The fruity is medium, the balance is strong. Ideal product raw and to enhance important dishes.

Tasting notes: Medium fruity with notes of tomato and fresh grass, balanced.
Extraction method: we harvest the olives before ripening to maximize the potential of the Nocellara. Within 24 hours of harvesting, we take them to our trusted oil mill where they are pressed and cold pressed.
Age of the trees: secular.
Average yield in oil: <8%.
