We select the best trees of the family estate one by one, working the olives within 12 hours of harvesting. The result is an olive oil with a marked balance, ideal for gourmet processing.
Medium fruity with herbaceous and floral tones, the taste is sweet and balanced with pleasant bitter and spicy notes, sensations of green leaves, artichoke and green tomato.

Extraction method: we collect the olives at the time of veraison, that is when the color changes from green to purple. Within 12 hours of harvesting, we take them to our trusted oil mill where they are pressed and cold pressed.
